Caviar is judged based on its maturity, texture, color, and flavor. Lighter colored caviar is usually more expensive and higher quality, while darker caviar is seen as lower quality and is more affordable. When you eat caviar, pay attention to whether the eggs separate when you roll them around in your mouth. Caviar should pop in your mouth and not feel mushy.
Also, pay attention to whether the eggs are glistening. They should not be oily or murky. When you buy caviar, more expensive is not always better. Price is determined by rarity, not taste. If you’re a beginner with caviar, it’s okay to start at the low end of the price range.
